Healthy Breakfast Recipes

Here are two easy-to-make healthy breakfast recipes:

Sweet Potato Masala

Sweet Potato Masala

Balances: Vata, Pitta, and Kapha

Servings: four

Ingredients

two tablespoons of oil
half teaspoon black mustard seeds
pinch of turmeric
one teaspoon of freshly chopped ginger
two medium or one large sweet potato. Use white potatoes if you like
two medium carrots
couple handfuls of greens: spinach, mustard greens
one finely chopped onion and a small amount of garlic
half teaspoon salt
half teaspoon coriander powder
half cup of filtered water, HOT


Preparation And Cooking

  1. Wash and chop vegetables

  2. Soak them in a few drops of grapefruit seed extract and filtered water for fifteen minutes. Now and again, rub and clean the chopped veggies in the solution

  3. Peel and finely chop the fresh ginger. If you're a Kapha body-mind type, you may want to experiment with powered, dried ginger

  4. Warm two tablespoons of oil in a good quality skillet

    Best Organic Oils: virgin coconut oil, ghee, butter, toasted sesame oil

  5. Add the black mustards seeds and hing [asafoetida]

  6. When mustard seeds start to pop, add ginger, turmeric. Stir. Then add vegetables. Stir to cover veggies with oil "magic" mixture

  7. Add "hot," filtered water. Cover and cook on medium heat until the potatoes and carrots are tender

  8. Stir in salt and coriander

  9. Serve

Optional:

  • add six cardamom seeds when you add the ginger
  • use different vegetables: white potatoes, parsnips, rutabaga or swede
  • use pink himalayan salt instead of sea or rock salt
  • when serving, sprinkle organic coconut flakes on top for extra fiber
