Healthy Vegetable Stew

Thanks Scott for a great Web site. I've been using it for my daily Yoga practice. Now you have healthy recipes. Well, I thought I would contribute one of my favorites. Thanks again.
Servings: 4
Ingredients:
2 cups mashed potatoes - white and/or sweet
quarter cup milk or coconut milk
pinch Paprika or Cheyenne pepper
1 chopped onion
1 tablespoon oil
1 pound broccoli or two bunches of spinach or collard greens
1 diced red pepper
3 medium carrots
1 teaspoon salt
1 bay leaf
half teaspoon basil
half cup chopped tomatoes
quarter cup tomato paste
half cup filtered water
Optional Ingredients:
couple dashes of medium curry powder for extra bite
Preparing and Cooking
Cook and mash potatoes well with milk and salt. Put to the side.
Cut broccoli into small florets or chop collard greens, and wash spinach
Preheat oven to 350 degrees
Saute onion in oil
Add optional dashes of curry powder. Stir.
Add broccoli and/or greens, red pepper, carrots. Stir
Add bay leaf and basil. Stir
Add tomatoes. Stir
Bring to a near boil, turn to a low heat, cover, and simmer for about 15 minutes or until vegetables are tender.
Stir in spinach
Add salt
Place vegetable mixture into a medium baking dish
Spread potato mixture on top and add a dash of paprika or Chayenne pepper all over.
Bake for about 15 minutes or until potatoes are hot.
Serve.
